Ingredients List:

·      4 pounds amber DME

·      1.4 pounds Alexanders Kicker

·      ½-pound Muntons 60L Crystal malt

·      1½ ounces Mt. Hood hops (bittering)

·      ½ ounce Mt. Hood hops (aroma)

·      1 packet Danstar Windsor dry brewers yeast (recommended liquid yeast: White Labs WLP013 – London Ale)

·      1 muslin grain bag

·      1 muslin hops bag

 

Brewing Instructions:

Place the cracked grains inside the muslin grain bag. Tie it off, and place it in a brew pot with 1-gallon of water. Raise the temperature to 155 degrees F and hold it for 30 minutes. Remove the grain bag, and increase the heat to bring the wort to a rolling boil. Add the malt extract and the kicker and set the timer for 45 minutes. Add the bittering hops when you have 30 minutes remaining. Add the aroma hops with 2 minutes remaining.

Add pre-chilled water to a clean and sterilized fermenter. Strain the hot wort into the fermenter, and add enough pre-chilled water bring the volume to about 5¼ gallons. Add the yeast when the liquid is less than 80 degrees F.

Primary ferment should last 8 to 12 days.
